Step 1: Unbox Immediately and Check Each Mango

As soon as your mango box arrives, open it and gently check each mango. Remove any mango that shows signs of damage or dark spots — consume these first. Healthy mangoes should feel firm, smell faintly of Hapus aroma, and have no visible cuts or damage.


Step 2: Keep at Room Temperature — Never in the Fridge

The most common mistake people make with Alphonso mangoes is refrigerating them when they arrive. Do not put unripe mangoes in the refrigerator. Cold temperatures stop the natural ripening process permanently and alter the flavour and texture. You will end up with mangoes that never ripen properly and taste bland or starchy.

Step 5: How to Know Your Alphonso Mango Is Ripe

  • Smell: A strong, sweet, floral Hapus aroma is the clearest sign of ripeness

  • Touch: Gives slightly when pressed gently — not rock-hard, not mushy

  • Colour: Skin turns from greenish-yellow to full golden-saffron yellow

  • Appearance: Slight wrinkling near the stem is normal and indicates full ripeness

Can You Refrigerate Ripe Alphonso Mangoes?

Yes — but only once fully ripe. Once your Hapus mangoes have ripened at room temperature, you can refrigerate them for up to 2 days to extend their life. For longer storage, scoop out the pulp, seal in an airtight container, and freeze — mango pulp freezes well for 3 to 6 months.
